THE REINVENTION OF TAURASI: PATERICO AS THE FIRST MODERN FINE WINE FROM SOUTHERN ITALY. The purest expression of Taurasi and the Aglianico grape, an approach exemplified by Gian Luca Mazzella. Mazzella macerates the grapes for three months, followed by three to four years of aging. Taurasi in Transition: Reimagining Aglianico in Southern Italy | GuildSomm
