GRECO DI TUFO: GRIPPY, SAVORY, FOOD-COMPATIBLE WHITE WINES Tufo is Irpina’s smallest but most densely planted appellation (there are eight villages). The grape it's rich in polyphenols and catechins, a flavonoid which contributes bitterness. More like a red than a white, tannin combined with acidity earned Greco a reputation for rustic and/or robust white wines. Greco di Tufo is captivating for its capacity to reflect the nuances of terroir. Moreover this capricious variety becomes more complex and intriguing with age. THE TALE OF FOX'S TAIL GRAPE Greco di Tufo was born in the mid 17th century, when Scipione di Marzo arrived in Tufo, province of Avellino. After planting Aminea Gemina in the local new soil, famed for its sulphur minerals and fossils, he became the creator of Greco di Tufo. Cantine di Marzo still makes wine from 100% Greco grapes. Some Greco di Tufo wines may not be 100% Greco Bianco as the denomination allows for 15% Coda di Volpe Bianca, a grape which ripens late and is harvested during the first ten days of October. A WAITER BRINGS OUT A BOTTLE OF COLD GRECO DI TUFO And quickly thereafter plates of spaghetti dotted with thin slices of zucchini that are somehow both crispy and tender, caramelized and juicy. Spaghetti alla Nerano, is a playful dish that only requires a handful of ingredients and solves for your overabundance of late summer zucchinis. It's crisp, creamy, and best enjoyed with the slight and dry acidity that comes with a Greco di Tufo. Stanley Tucci Inspired Spaghetti alla Nerano | Table Magazine
