TAURASI DOCG — 17 DESTINATIONS TO CHOOSE BY-THE-GLASS Taurasi's soils are calcareous limestone as the base, overlaid in many zones with volcanic material – ash, lapilli, tuff – from eruptions. The highest positions – the triangle of Paternopoli, Castelfranci, and Montemarano – produce the most austere wines. Aglianico ripens late – late October, November, sometimes into December. The vine's reluctance to ripen is also its gift: the slow, long season creates the structure, acidity, and complexity that make Taurasi what it is.
